Mamas Italian Cream Cake

- 1/2 cup butter-softened shopping list
- 1/2 cup shortening shopping list
- 2 cups sugar shopping list
- 5 eggs-separated shopping list
- 2 cups cake flour shopping list
- 1 cup buttermilk shopping list
- 1 teaspoon baking soda shopping list
- 1 1/2 cups shredded coconut shopping list
- 1/2 cup chopped pecans shopping list
- 1 teaspoon vanilla extract shopping list
- Frosting: shopping list
- 1/2 cup butter-softened shopping list
- 1 8oz package cream cheese-softened shopping list
- 1 16oz box powdered sugar-sifted shopping list
- 1 teaspoon vanilla extract shopping list
- 1 cup chopped pecans shopping list
- 1 cup shredded coconut shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease and flour three 9" round cake pans.
- In a large mixing bowl, cream butter,shortening,and sugar. Add egg yolks one at a time, beating well after each addition.
- With mixer running on low, add flour and buttermilk alternately until well combined.
- Add baking soda.
- Stir in pecans and coconut.
- In a separate mixing bowl, beat egg white until soft peaks form.
- Gently fold into cake batter.
- Pour batter into prepared pans.
- Bake for 25 minutes or until inserted toothpick comes out clean.
- Cool in pan for 10 minutes then turn out onto wire racks.
- Cool completely.
- Frosting:
- In a mixing bowl, cream butter and cream cheese until light and fluffy. Add vanilla.
- Gradually add powdered sugar and beat until well blended and creamy. If frosting is too stiff,add a little milk.
- Stir in pecans and coconut.
- Frost cake as usual.
- Suggestion:
- Leave the sides of the cake unfrosted for better presentation.
