Tomato Onion Quiche

- 1 sheet refrigerated pie pastry shopping list
- 1c(4oz)shredded mozzarella cheese shopping list
- 1/2c sweet onion,sliced shopping list
- 2 small plum tomatoes,seeded and thinly sliced shopping list
- 3 med. fresh mushrooms,thinly sliced shopping list
- 1/4c shredded parmesan cheese shopping list
- 3 eggs shopping list
- 1/2c half and half shopping list
- 1/2tsp ground mustard shopping list
- 1/2tsp dried basil shopping list
- 1/2tsp dried oregano shopping list
- 1/2tsp dried thyme shopping list
How to make it
- Cut pastry sheet in half. On lightly floured surface,roll out remaining half into 8" circle. Transfer to 7" pie plate;flute edges
- Layer half the mozzarella cheese,onion and tomato in pastry. Top with mushrooms;layer with remaining mozzarella cheese,onion and tomato. Sprinkle with parmesan cheese. In a swmall bowl,combine the eggs,cream,mustard and herbs;pour over top.
- Bake at 350 for 45-55 mins. or until knife inserted near the center comes out clean. Let stand for 10 mins. before cutting.
