Ingredients
  • 4 large baking potatoes
  • 1 med. sized red or green bellpepper
  • 1 small onion chopped
  • 2 tbsp. melted butter
  • 1 tbsp. taco seasoning
  • 1 1/2 shredded chicken breast
  • 1/2 cup shredded monterey jack cheese
  • 1 (21/4 oz.)can sliced black olives drained
  • 2tbsp diced green chiles
  • 1 cup salsa, sour cream, guacomle

Directions
  1. Wrap potatoes in aluminum foil, and bake at 400 degrees for 1 hr.
  2. Cook pepper & onion in butter in a med.pan until tender. Add taco mix.
  3. cook 1 min. remove from heat.
  4. Stir chicken, cheese, olives,& chiles
  5. serve on top of potatoes
