Chicken Fajita Potatoes

Great for cold weather. New spin on fajita night
Ingredients
- 4 large baking potatoes shopping list
- 1 med. sized red or green bellpepper shopping list
- 1 small onion chopped shopping list
- 2 tbsp. melted butter shopping list
- 1 tbsp. taco seasoning shopping list
- 1 1/2 shredded chicken breast shopping list
- 1/2 cup shredded monterey jack cheese shopping list
- 1 (21/4 oz.)can sliced black olives drained shopping list
- 2tbsp diced green chiles shopping list
- 1 cup salsa, sour cream, guacomle shopping list
How to make it
- Wrap potatoes in aluminum foil, and bake at 400 degrees for 1 hr.
- Cook pepper & onion in butter in a med.pan until tender. Add taco mix.
- cook 1 min. remove from heat.
- Stir chicken, cheese, olives,& chiles
- serve on top of potatoes
