Chicken And Spinach Salad Recipe
Yummy, I loveeeeee this salad. But because of the fruit, I can not have it. I do admit, I will cheat a little and eat some of this one.

Ingredients
  • 6 ounces fresh spinach
  • 2 oranges, peeled and cut into chunks
  • 2 cups cooked and cubed chicken
  • 2 cups fresh strawberries
  • ***DRESSING***
  • 2 tablespoons red wine vinegar
  • 3 tablespoons orange juice
  • 1 1/2 tablespoon canola oil
  • 1/4 teaspoon dry mustard
  • 1/3 teaspoon poppy seeds

Directions
  1. Mix all of the dressing ingredients together and regrigerate.
  2. Wash spinach and tear into bite size pieces.
  3. Add oranges, chicken and strawberries.
  4. Serve with dressing.

As far as I'm concerned this is a 5! What counld anyone possibly find wrong with it? It would be great for a quick lunch, as a side dish for a dinner or even to take to work for a day of two as a mid-afternoon snack. Love it......-Susana
