Spiced Chicken Thighs Recipe
For a weeknight,brown rice makes a good side for this saucy dish. Bas mati rice very good with it.

  • 3/4tsp. olive oil
  • cooking spray
  • 1c vertically sliced onion
  • 2tsp garam masala
  • 1/2tsp salt
  • 1/4tsp curry powder
  • 8 chicken thighs(about 21/4lbs) skinned
  • 1/4c dry red wine
  • 1c fat-free,less-sodium chicken broth
  • 3Tbs chopped fresh parsley
  • 2Tbs. red wine vinegar

Directions
  1. Heat oil in 12" non-stick skillet coated with cooking spray over med-high heat. add onion;saute 3 mins.
  2. remove from pan.
  3. Combine garam masala,salt,curry powder;sprinkle evenly over chicken.Add chicken to pan;cook over med-high 4 mins. each side or till browned. Add wine and vinegar;cook 30 seconds,scraping pan to loosen browned bits. Add onion and broth;bring to a boil. Cover,reduce heat and simmer 20 mins,or till chicken is done;stir in parsley.
