How to make it

  • Preheat oven to 350*F.Line 16 muffin cups with paper liners.Place the pie filling in a small bowl.Cut any large apple pieces into 1/2-inch chunks.
  • For the muffins,Combine the all-purpose and whole wheat flours,the pudding mix,brown sugar,baking powder,cinnamon and salt in large bowl.Mix well.
  • Combine 1 1/4 cups apple filling,the milk,oil and egg whites in another large bowl.Mix well.Add the flour mixture to the fruit mixture.Stir until just combined.
  • Divide the batter evenly among the prepared muffin cups.For the topping,Combine the sugar and cinnamon in a small bowl.Spoon the remaining apple filling over the batter in the muffin cups.Sprinkle evenly with the sugar mixture.
  • Bake until the muffins are golden brown,about 25 minutes.cool in the muffin cups on wire racks for 10 minutes.Serve warm.

    I don't think I've ever seen an Apple Custard muffin, but it sounds exceptionally good - gotta save this one for the next Muffin Morning!
