Honey And Cider Squirrel Recipe

Ingredients
  • 2 young squirrel, dressed & halved
  • 1/2 cup honey
  • 2 cups apple cider
  • 2 bay leaves, crushed
  • 1 TBL cornstarch
  • 2 TBL water

Directions
  1. Pat squirrel halves dry.
  2. Place on rack in broiler pan.
  3. Coat with half the honey.
  4. Broil 6 inches from heat source for 8 minutes.
  5. Turn. Coat with remianing honey. Broil for 8 minutes longer.
  6. Place in roasting pan.
  7. Pour cider over squirrel. Add bay leaves. Roast at 350 degrees for 1 hour or until tender.
  8. Remove to serving platter; keep warm.
  9. Strain pan drippings into saucepan.
  10. Dissolve cornstarch in water; stir into pan drippings.
  11. Cook over medium heat until thickened, stirring constantly.
  12. Serve with squirrel.
  13. May serve with crisp shoestring potatoes and green salad.

:-0 squirrel! I didn't know you could eat those little critters. Can you buy them or do you have to catch them?


You know I can't kill the little things anymore, but I sure eat 'um if somebody brings me some. Sounds delish as usual Grizz.
