Bourbon Chicken with Apples

- 3 Tbsp. vegetable oil shopping list
- 1 chicken, cut up (I use all breasts only) shopping list
- salt and pepper shopping list
- 2 Tbsp. butter shopping list
- 2 granny smith apples, cored, peeled and chopped shopping list
- 1 Tbsp. minced chives shopping list
- ½ cup chicken stock shopping list
- ½ cup bourbon whiskey or apple brandy shopping list
- 2 Tbsp. lemon juice shopping list
- minced parsley shopping list
How to make it
- Heat oil in heavy skillet over medium high heat.
- Add chicken, skin side down.
- Saute 6 minutes or until lightly browned.
- Turn and sauté 5 minutes longer.
- Add salt and pepper; cover and steam 5 minutes.
- Remove chicken from skillet; set aside.
- Pour off oil; discard.
- Wipe skillet clean with paper towel.
- Melt butter in clean skillet over low heat.
- Add apples; sauté 2 or 3 minutes.
- Return chicken to skillet.
- Sprinkle with chives, add stock and ¼ cup liquor.
- Cover and simmer 30 minutes until tender.
- Put chicken on a platter; pour remaining liquor and lemon
- juice in skillet.
- Stir constantly for 1 minute until heated.
- Spoon apples and sauce over chicken.
- Sprinkle with parsley. Serve hot.
