How to make it

  • Heat oil in heavy skillet over medium high heat.
  • Add chicken, skin side down.
  • Saute 6 minutes or until lightly browned.
  • Turn and sauté 5 minutes longer.
  • Add salt and pepper; cover and steam 5 minutes.
  • Remove chicken from skillet; set aside.
  • Pour off oil; discard.
  • Wipe skillet clean with paper towel.
  • Melt butter in clean skillet over low heat.
  • Add apples; sauté 2 or 3 minutes.
  • Return chicken to skillet.
  • Sprinkle with chives, add stock and ¼ cup liquor.
  • Cover and simmer 30 minutes until tender.
  • Put chicken on a platter; pour remaining liquor and lemon
  • juice in skillet.
  • Stir constantly for 1 minute until heated.
  • Spoon apples and sauce over chicken.
  • Sprinkle with parsley. Serve hot.

    You changed your avatar - almost missed you! This sounds fantastic, connor...love cooking meat with fruit - such great flavors result. Looking forward to trying this one...I actually have some Calvados from when we were in France a few years back - perfect for this!

    Oh yummm...I love the flavors going on here. And I love the bourbon whiskey add, but I would be most interested in using the apple brandy. Sounds wonderful - thank you! :)
