Plain Bagels

- 1 1/3 cups warm water, divided shopping list
- 1 tbsp sugar (for savoury bagels - for sweet increase to 3 tbsp) shopping list
- 1 pkg active dry yeast shopping list
- 3 1/3 cups flour shopping list
- 1 tbsp vital wheat gluten shopping list
- 1/2 tsp salt shopping list
- 1 tbsp honey or maple syrup shopping list
How to make it
- In a large bowl (preferably of a stand mixer), combine 1/3 cup warm water, sugar and yeast. Let stand 10 minutes.
- In another bowl, mix together flour, gluten and salt.
- With the mixer on low speed, slowly begin adding in flour until it's all incorporated. The dough will be very stiff.
- Increase the mixer speed to medium and knead 8-10 minutes.
- Place in a greased bowl, cover and allow to rise 2-3 hours, until doubled.
- Punch down and cut into 8 even pieces. Cover and let rest 10 minutes.
- Shape each piece of dough into a ring and place on greased or lined baking sheets.
- Cover rings and place into the fridge for 12-24 hours.
- Remove from fridge and allow to rise 1 hour at room temperature.
- Preheat oven to 375F and bring a large pot of water to boil. Add sweetener to the water.
- When bagels have risen, add two at a time to the boiling water and cook 1 minute, flipping over after 30 seconds. Place on greased or lined baking sheets.
- Bake one sheet at a time for 20 minutes, cool on a wire rack.
