Ingredients
  • LOAF:
  • 4 to 5 pounds cooked chicken pieces, boned and cooled
  • 2 cups steamed rice
  • 1 teaspoon salt
  • 3 cups broth OR 1 1/2 cups broth and 1 1/2 cups milk
  • 4 large eggs, beaten
  • 2 cups bread crumbs
  • 1/2 cup pimento, minced
  • SAUCE:
  • 1/4 cup butter
  • 1 large can mushrooms
  • 1/4 cup flour
  • 1 teaspoon lemon juice
  • Parsley
  • 1/4 cup cream

Directions
  1. LOAF:
  2. Preheat oven to 300 degrees F.
  3. Grease 1 loaf pan (no dimensions given)
  4. Mix rice, bread crumbs, pimento, broth and eggs together in large bowl.
  5. Add chicken.
  6. Press mixture into loaf pan.
  7. Bake for 1 1/2 hours.
  8. SAUCE:
  9. Cook all together over medium heat to desired consistency.

I never noticed that, you eagle-eyed, julia! It DOES look like and egg in there. I have no explanation for the existence of that egg.. I think my browser let me down with this image! Thanks for the five and enjoy your weekend, my friend.

I have never made any kind of loaf using meat except, of course, for the old standby that we all make. I guess "molding" the loaf in a pan throws me off some. I'd like to know how you enjoy this, krum.
