How to make it

  • LOAF:
  • Preheat oven to 300 degrees F.
  • Grease 1 loaf pan (no dimensions given)
  • Mix rice, bread crumbs, pimento, broth and eggs together in large bowl.
  • Add chicken.
  • Press mixture into loaf pan.
  • Bake for 1 1/2 hours.
  • SAUCE:
  • Cook all together over medium heat to desired consistency.

    Our family has made a close version of this for about 50 years. We use 1/2 the amount of rice and fresh bread crumbs. I think the pimento makes this dish. It is a family favorite.

    I have never made any kind of loaf using meat except, of course, for the old standby that we all make. I guess "molding" the loaf in a pan throws me off some. I'd like to know how you enjoy this, krum.

    I never noticed that, you eagle-eyed, julia! It DOES look like and egg in there. I have no explanation for the existence of that egg.. I think my browser let me down with this image! Thanks for the five and enjoy your weekend, my friend.
