Red Peppers With Turkey And Rice Recipe
This is a lowfat recipe I came up with in place of stuffed peppers.

Ingredients
  • large vidalla onion
  • 3 large red peppers
  • minced garlic-to your taste
  • olive oil
  • 2 cups of brown rice cooked- I cooked mine with a packet of beef boulion.
  • 1lb ground turkey- I used 93% fat free
  • 2 cups of tomato sauce - I used my own but you could use a jarred sauce.

Directions
  1. preheat oven to 400
  2. cut up peppers and onion toss with garlic and a little olive oil
  3. spread into the bottom of a baking pan and put in the oven until soft.
  4. meanwhile brown the ground turkey add salt and pepper to taste
  5. add rice to the ground turkey and mix- layer onto the softened peppers and onions.
  6. Add tomato sauce
  7. put into the oven until everything is steaming hot.
  8. my kids topped theirs with mozzerella cheese.
