Cascades Baked Stuffed Flounder

- 6 baby flounder, boned, or shopping list
- 6 flounder fillets shopping list
- seafood Dressing (see below) shopping list
- salt and pepper to taste shopping list
- 3 tablespoons lemon juice shopping list
- 1 cup fine bread crumbs shopping list
- 1/3 pound butter, melted shopping list
How to make it
- Preheat oven to 375° F.
- Grease shallow baking pan.
- Stuff each fish with 4 to 6 tablespoons of Seafood Dressing, or spread the same amount of dressing over each fillet. Roll and fasten with toothpicks.
- Place in prepared baking pan, and season with salt, pepper , and lemon juice.
- Sprinkle bread crumbs over fish.
- Melt butter and pour over fish.
- Bake at 375° F. for 25 to 30 minutes or until fish flakes easily when tested with a fork.
- SEAFOOD DRESSING
- 6 tablespoons butter
- 1/4 cup celery, finely chopped
- 1/2 cup onion, finely chopped
- 1/4 cup green pepper, finely chopped
- 1/2 pound shrimp, cooked and diced
- 1 teaspoon parsley, chopped
- 1 teaspoon pimiento, finely chopped
- 1/2 teaspoon paprika
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon seafood seasoning salt to taste
- 1/8 teaspoon cayenne pepper
- 1/4 cup dry sherry
- 1 1/2 cups bread crumbs
- Melt butter, add the vegetables, and saute until tender.
