Ingredients
  • According to the recipe, "2 quarts of vinegar sounds like a lot, but the result isn't intolerably sour. You could substitute 2 cups of water for 2 cups of vinegar if you want. But if you're finicky about garlic, don't even consider this prodigiously aromatic dish!"
  • 4 pounds boneless pork
  • 12 heads garlic (heads not cloves!)
  • salt
  • 8 cups vinegar
  • 2 bunches thyme
  • 8 rolls

Directions
  1. Cut pork into egg-sized chunks.
  2. Peel garlic and chop roughly.
  3. Dissolve salt to taste in vinegar.
  4. Mix pork, garlic, vinegar, and thyme sprigs in nonreactive pot.
  5. Cover and marinate in refrigerator 1 to 3 days.
  6. Bring to boil, covered, then uncover and simmer until pork is tender, 30 to 45 minutes.
  7. Remove meat from pot and keep warm.
  8. Reduce sauce to 1/3 over medium heat, 20 to 30 minutes.
  9. Slice rolls in half and use to sop up sauce.
  10. Remove thyme sprigs from pot and serve meat and content s of pan with sopped rolls.

Whoa - that IS an interresting recipe...and 8 cups of vinegar does sound like a lot. Erin just made a pulled pork recipe with mainly vinegar that she said turned out absolutely delicious, so I'm thinking this recipe is somewhere along that same line (just with a lot more garlic!) - I'm gonna have to give it a try...very interesting, connor ~

I can't wait to try this one because I have eaten this at the Beach. My co worker, at that time, did this every 4th of july.It is Superb! I didn't get her recipe before I moved from the beach but I remembered the ingredients and that you had to soak it for awhile but not how to prepare so thank you for this one. I had to flag this bcause I know how wonderful this is.

I'm going to try this, it sounds so diffrent, and if Blue said she had this then it's good enough for us.....:)
