Mexican Rollups Recipe
I like to make these when we have card parties. I usually make 16 and cut them into thirds. There are never any left. I also like to used flavored tortillas like spinach or sundried tomato. Yummers.

Ingredients
  • 16 ounces cream cheese softened
  • 4 ounces chopped ripe olives
  • 4 ounces chopped green chilies
  • 1 tablespoon chopped green onions
  • 1/4 teaspoon seasoned salt
  • 1/4 teaspoon chili powder
  • 8 flour tortillas

Directions
  1. Mix all ingredients in softened cream cheese then spread on tortillas.
  2. Roll up and refrigerate then slice and serve with salsa.

I've posted a very similar recipe only instead of chili powder and season salt, I use taco seasoning. Either hot or mild depending on taste. And I usually leave the olives out since I know so many who dislike them. I also mix in a little mayo and sour cream with the cream cheese along with some shredded taco cheese.
