How to make it

  • Bring 1 1/2 cups cream, wine, broth, mushrooms, shallot, thyme, and salt and pepper to a boil.
  • Reduce heat and simmer until thickened and you have about two cups of sauce.
  • Add lemon juice and remove from heat and let cool.
  • Broil scallops in single layer in buttered dish 2 quart or larger until almost cooked through. 4-7 minutes depending on size of scallops.
  • While broiling beat the last half cup of cream until stiff peaks form and then fold into mushroom sauce.
  • Spoon sauce over scallops and broil until sauce is brown and scallops are cooked.
  • We serve over angel hair pasta.

    This sounds very yummy. The only change I would have to make is sub shrimp for the scallops. I don't like scallops, but this seems like it would work well with the Shrimp and I LOVE mushrooms... Can't wait to try this!
