Scallops with Mushroom Sauce

- 2 cups heavy cream shopping list
- 1 cup white wine shopping list
- 1/2 cup low sodium chicken broth shopping list
- 1 pound mushrooms thinly sliced shopping list
- 1 minced shallot shopping list
- 1 tsp fresh thyme minced shopping list
- salt and pepper to taste shopping list
- 1 tsp fresh lemon juice shopping list
- 1 pound of fresh scallops - medium to large shopping list
How to make it
- Bring 1 1/2 cups cream, wine, broth, mushrooms, shallot, thyme, and salt and pepper to a boil.
- Reduce heat and simmer until thickened and you have about two cups of sauce.
- Add lemon juice and remove from heat and let cool.
- Broil scallops in single layer in buttered dish 2 quart or larger until almost cooked through. 4-7 minutes depending on size of scallops.
- While broiling beat the last half cup of cream until stiff peaks form and then fold into mushroom sauce.
- Spoon sauce over scallops and broil until sauce is brown and scallops are cooked.
- We serve over angel hair pasta.
