Scallops With Mushroom Sauce Recipe
A thin but rich mushroom sauce baked over scallops for a gourmet dinner at home. I received this recipe from a friend and it has become a favorite. Sometimes I just make the sauce and thicken it up for pasta.

Ingredients
  • 2 cups heavy cream
  • 1 cup white wine
  • 1/2 cup low sodium chicken broth
  • 1 pound mushrooms thinly sliced
  • 1 minced shallot
  • 1 tsp fresh thyme minced
  • salt and pepper to taste
  • 1 tsp fresh lemon juice
  • 1 pound of fresh scallops - medium to large

Directions
  1. Bring 1 1/2 cups cream, wine, broth, mushrooms, shallot, thyme, and salt and pepper to a boil.
  2. Reduce heat and simmer until thickened and you have about two cups of sauce.
  3. Add lemon juice and remove from heat and let cool.
  4. Broil scallops in single layer in buttered dish 2 quart or larger until almost cooked through. 4-7 minutes depending on size of scallops.
  5. While broiling beat the last half cup of cream until stiff peaks form and then fold into mushroom sauce.
  6. Spoon sauce over scallops and broil until sauce is brown and scallops are cooked.
  7. We serve over angel hair pasta.

This sounds delicious and easy. I love mushrooms and scallops, and I will definitely try this on thank you..........:)


This sounds very yummy. The only change I would have to make is sub shrimp for the scallops. I don't like scallops, but this seems like it would work well with the Shrimp and I LOVE mushrooms... Can't wait to try this!
