Vegetarian Black Bean Chili Recipe

Ingredients

1/3 cup olive oil

1 C Finely chopped onion

3/4 C chopped celery

1 C Chopped green pepper

1 C chopped carrots

1 tbsp Minced Garlic

2 C sliced mushrooms

1 tbsp ground cumin

3/4 tsp dried basil

1-2 tbsp chilli powder

3/4 tsp Dried Oregano

1 1/8 tsp salt

3/4 tsp pepper

1 - 28 oz can tomatoes with juice

3 cups cooked black beans or canned with liquid

3/4 tsp Tabasco

3 oz tomato paste

1/4 cup red wine

2 C water

Directions

Heat oil, add onions, celery, green peppers, carrots, garlic, mushroom, cumin, basil, chili powder, oregano, salt and pepper, and saute for 2-3 minutes.

Add tomatoes and juice, beans and liquid, Tobasco, tomato paste, wine, and water and bring to boil, stirring constantly.

Reduce heat and simmer for 20 minutes or until carrots are tender.

Serve with sour cream and tortilla chips.

Excellent!! Great flavors and chock full of veggies.....I decreased the oil to 2 tblspns. and added a small can of diced green chilies....kept everything else the same. Served with cheeses, sour cream and tostitos scoops. Very filling and yummy! Thanks Sanzoe :)

This was great. I followed the recipe to the letter. Pssst, sanzoe, the directions state adding the celery but celery isn't listed in the ingredients. I just guestimated how much to put in, probably around 3/4 of a cup.
