HOT CHICKEN SALAD Recipe
DELICIOUS CHICKEN SALAD. CAN BE AN APP OR AS A SANDWICH

Ingredients
  • 2 CUPS DICED COOKED CHICKEN
  • 1 C MAYO ( I PREFER DUKES )
  • 2 TBSPS LEMON JUICE
  • 2 C CHOPPED CELERY
  • 2 TSPS GRATED ONION
  • 1/2 TSP SALT
  • CAYENNE PEPPER ( DASH )
  • 1/2 C CHOPPED TOASTED ALMONDS
  • 4 OZS GRATED CHEESE
  • 1 C FINELY CRUSHED POTATO CHIPS

Directions
  1. COMBINE ALL INGREDIENTS EXCEPT CHEESE AND POTATO CHIPS.
  2. SPRINKLE WITH CHEESE AND TOP WITH CHIPS IN A 8 X 10 PAN
  3. BAKE AT 350 DEGREES....ENJOY BY THE SPOONFULS OR AS A SANDWICH!!

This was a classic at my house when I was growing up. It's wonderful. Don't skip the potato chips-its what makes the dish. we tend to low salt so I don't add salt since the chips add plenty for our taste. This is also a great answer to the questions about bringing a dish to a family with a new baby or an illness. I'd give this dish 10 forks if I could
