Ingredients
  • Marinara Sauce
  • 1/4 Cup Olive oil
  • 2 cans of cut or crushed tomatoes
  • 1 Can of tomato paste
  • 4-6 cloves of garlic
  • 1 onion, diced
  • 1/2 - 3/4 cup dry white wine (or broth)
  • 1/2- 1 Cup button mushrooms
  • 1 or 2 bay leaves
  • 1/4 Tsp basil
  • 1/4 Tsp oregano
  • 1/4 Tsp parsley
  • 1/8 to 1/4 Tsp red pepper flakes (adjust to taste or omit)
  • 1 Tsp sugar
  • 1 bouillon cube
  • Meatballs
  • 1/2 pound (each) ground chicken, beef, and pork
  • 4-5 cloves minced garlic
  • 1/2 onion, diced
  • 1 Egg
  • 1/2 Cup of breadcrumbs
  • 1/8 Tsp (each) basil, oregano, parsley
  • 1/2 Cup Parmesan cheese
  • salt and pepper (to taste)
  • Mozzarella or Parmesan cheese for topping

Directions
  1. The Marinara
  2. Pour the olive oil into a pan and heat.
  3. Saute the garlic and onions until transparent. Add in the mushrooms and cook for 2-3 more minutes or until the aroma starts come out.
  4. Add the tomatoes and the tomato paste and bring to a boil.
  5. Reduce heat and add in the white wine (or broth), herbs, seasonings, bouillon, and sugar. Simmer at least a half hour adjusting for taste.
  6. The Meatballs
  7. Combine all the ingredients and mix well being careful not to over mix.
  8. You can test flavor by frying a little of meat mixture before making the meatballs.
  9. Take a small portion of meat mixture and roll into balls. Don't mash too hard, but just enough to keep it's shape. (Over-handling makes meat tough)
  10. Heat a frying pan with a little olive oil.
  11. Place the meatballs in the hot oil and brown all sides.
  12. Place browned meatballs into an oven safe dish coated with marinara sauce.
  13. Spoon marinara sauce over the meatballs and sprinkle some mozzarella or Parmesan cheese on top.
  14. Bake 5-10 minutes at 350 degrees, or until juices run clear.
