Ingredients
  • 2 sirloin strip steaks, 1/2 inch thick
  • 2 tbsp veg oil
  • 1 tbsp salt
  • 2 tbsp freshly ground pepper
  • 2 cloves garlic, finely chopped
  • 1 cup coarse bread crumbs
  • 1 brown paper bag

Directions
  1. rub steaks well with oil, garlic, salt, and pepper
  2. press the bread crumbs into the steaks to form a thick coating
  3. put carefully into paper bag and tie with string
  4. roast in a 375 degree oven for 35-40 minutes for rare, about 10-15 mins longer for med or well done.

Hi Rlb! I hope this doesn't sound like a stupid question, but what does the paper bag do? I did find something on a net, where this chef prefers to cook steak in a paper bag - I just didn't find a reason why. Thanks in advance!


I too was curious so I googled it and found some additional info that might be helpful:

Before cooking, bring steak to room temperature. Heat oven to 375 degrees F. Place bag on a rimmed baking sheet and bake 30 minutes. For medium rare steak, increase oven temperature to 425 degrees F and bake 15 minutes longer, a total of 45 minutes. For medium-well steak, reduce heat from 425 degrees F to 375 degrees F and bake 5 minutes longer before removing from oven, a total of 50 minutes. Remove steak from bag. Let stand 5 minutes before carving into thin slices.
