Lavender and Honey Shortbread Recipe

How to make it

  • Preheat oven to 300 degrees F.
  • Mix flour, 1/3 cup confectioners' sugar and cornstarch in food processor.
  • Add butter and pulse until coarse crumbs form.
  • Add honey, lavender and 1/2 teaspoon of the vanilla.
  • Cover and pulse until dough pulls away from bowl.
  • Place dough in UNgreased 9" tart pan with removable bottom.
  • Cover with waxed paper and press to form a smooth, even layer.
  • Remove waxed paper. Pierce dough all over with fork.
  • Score top with a knife to make 12 pieces.
  • Bake 25 to 30 minutes OR until firm and starting to PALE brown.
  • Remove from oven.
  • Place pan on wire rack.
  • Cut shortbread into wedges while still warm.
  • Remove from pan to rack to cool.
  • Mix remaining confectioners' sugar, milk and remaining vanilla to make icing.
  • Drizzle over shortbread, if desired.

    Thank you so much for my "10", kukla! I too am a shortbread lover from way back. I've been having some difficulty finding lavender as even the McCormick product is hard to locate. Be assured that as soon as I find what I need, I'll be making this creation! Thanks for the five, my friend.

    I LOVE shortbread. Rich, buttery, authentic...literally 'melts' in your mouth....

    My 'new culinary find ingredient' of late has been lavender. I am enjoying all the ways it can be used.

    Thus, I wish I could give you a '10' for this one :)
