here is the most delicious way i have ever had BBQ chicken, its very traditional back home in Fiji. just remember low heat and proper air circulation on your grill is crucial to getting the perfect chicken..........BBQ chicken that is

Ingredients
  • 10 chicken thighs with skin( trim excess off, leave main skin on)
  • 1 TBSP minced Garlic
  • 1 TBSP minced Ginger
  • 1/2 TBSP minced chilli peppers(i would stick to thai chilli for max flavor)
  • 1 Cup dark soy sauce
  • 1/4 cup Oyster Sauce

Directions
  1. mix everything together and let marinade for about an hour.
  2. heat up the grill and make sure to wipe the grill with a tomato( it helps create a nonstick layer)
  3. place 5 chicken thighs on the grill and lower heat to med
  4. keep the lid of the grill closed but allow for some air to get in, if your grill has a vent, open the vent, if not keep the lid ajar with a small rock.
  5. cook till nice and redish in color and the meat is cooked to the bone or internal temperature of the meat is 160 F. be careful with a therm not hitting the bone as this will give a false reading.
