Easy Pasta Salad Recipe
Great for BBQs and you can eat cold or at room temperature. I love to serve it because it sneaks in veggies to my little ones and they ask for more.

Ingredients
  • 1 16 ounce package vermicelli or thin spaghetti
  • 1 green bell pepper, seeded and thinly sliced
  • 1 yellow or orange bell pepper, seeded and thinly sliced
  • 1 8 ounce container cherry tomatoes, cut in half
  • 1 onion, peeled and thinly sliced
  • 1 medium sized cucumber, peeled, seeded and thinly sliced
  • 1 16 ounce zesty italian dressing (fat free is great for this)
  • 2 tablespoons olive oil
  • 1/2 cup grated parmesan cheese

Directions
  1. Slice and prepare all vegetables. A mandoline is great for this task.
  2. Boil vermicelli according to the package directions. Rinse with cold water.
  3. In large bowl, mix all ingredients.
  4. Serve immediately or after chilled in fridge.
  5. For a complete meal-add sliced cooked chicken or shrimp. Add a salad.
