Spiced Beets and Carrots

- 1 pound fresh beets shopping list
- 1 pound carrots sliced shopping list
- 2 tablespoons grated fresh gingerroot shopping list
- 1/2 cup brown sugar shopping list
- 1/2 cup orange juice shopping list
- 1/4 cup cider vinegar shopping list
- Grated zest of 1 orange shopping list
- 1/2 teaspoon ground cinnamon shopping list
- 1/2 teaspoon mace shopping list
How to make it
- Wash beets well and cut off leaves leaving an inch or so of stem.
- Cover with cold water then bring to a boil and simmer covered until tender about 40 minutes.
- Drain and cover with cool or lukewarm water and when cool enough to handle slip off skins.
- Cut beets into slices or chunks then peel and cut carrots in slices or chunks same size as beets.
- Steam or boil in lightly salted water 5 minutes or until tender but not soft then drain well.
- Combine ginger, sugar, juice, vinegar, zest and spices in saucepan and bring to a simmer.
- Cook until thickened then simmer cooked beets and carrots in sauce for 5 minutes.
