Ingredients

How to make it

  • Wash beets well and cut off leaves leaving an inch or so of stem.
  • Cover with cold water then bring to a boil and simmer covered until tender about 40 minutes.
  • Drain and cover with cool or lukewarm water and when cool enough to handle slip off skins.
  • Cut beets into slices or chunks then peel and cut carrots in slices or chunks same size as beets.
  • Steam or boil in lightly salted water 5 minutes or until tender but not soft then drain well.
  • Combine ginger, sugar, juice, vinegar, zest and spices in saucepan and bring to a simmer.
  • Cook until thickened then simmer cooked beets and carrots in sauce for 5 minutes.

    Mmmm, sounds SO good! And I have all the ingredients, it must be an omen. I'm thinking I might roast the beets, & serve with this sauce. Thanks for the delicious post!
