Double Apple Kugel Recipe
This kugel is not too sweet, The applesauce helps keep it lite without adding too much fat.

Ingredients
  • 16 ounces egg noodles
  • 4 tablespoons (1/2 stick) margarine or butter, melted
  • 1 cup applesauce, no sugar added
  • 4 large eggs
  • 2 large egg whites
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons cinammon
  • ½ cup raisins
  • 4 medium green apples, peeled, quartered, and thinly sliced
  • nonstick cooking spray

Directions
  1. Preheat oven to 350 degrees. Grease or spray a 9x13 inch casserole with
  2. non-stick spray.
  3. Cook noodles several minutes less than package directions.
  4. Drain and return to saucepan.
  5. Add margerine (or butter) and applesauce, and toss
  6. to coat.
  7. In medium pan, whisk eggs and eggwhites, sugar, vanilla, and cinnamon
  8. until blended.
  9. Stir in noodles, raisins, and apples. Mix well.
  10. Pour everything into casserole; spread evenly.
  11. Spray a sheet of foil
  12. with nonstick spray and place on top of noodles.
  13. (At this point, it may be refrigerated overnight.)
  14. Bake, covered, 350 degrees for 45 minutes. Increase temperature to 375
  15. degrees.
  16. Remove foil, spray top of kugel with nonstick spray, and bake
  17. for 20 minutes more or until lightly golden.
  18. Let sit 15 minutes.
  19. Serve warm or at room temperature.
