How to make it

  • In a small saute pan on medium heat, melt the butter for the almonds; let warm up until fragrant
  • add almonds to coat bottom of pan in one layer. add garlic salt stir until almonds begin to brown. *note--do not leave...the almonds burn very quickly if you turn your attention away.
  • when slightly brown (don't worry if some look a little anemic...better a little on he light side than burned), pour out onto a paper towel to dry/cool. spread them out so the paper can absorb any excess butter
  • In the same pan (why dirty more dishes than you need to, right?), melt the butter for the beans on medium-high heat, add the beans, garlic, salt, pepper , lemon and tarragon, and saute until tender-crisp...about 4-6 minutes depending on how crispy you like them
  • pour into a serving bowl, add the goat cheese, and toss to mix. Immediately plate and sprinkle with the almonds. Serve and enjoy!
