My Grandmothers German Potato Salad

- 8 slices bacon, diced shopping list
- 1 large sweet onion, diced shopping list
- 1 teaspoon salt shopping list
- 4 tablespoons water shopping list
- 1/2 cup cider vinegar shopping list
- 6 tablespoons granulated sugar shopping list
- 2 tablespoons fresh parsley, minced shopping list
- 1/4 teaspoon ground black pepper, or to taste shopping list
- 6 cups cooked potatoes, cooled, peeled and cubed shopping list
How to make it
- In large skillet, fry bacon until crisp. Remove with slotted spoon and drain on paper toweling.
- Drain skillet of all but 3 tablespoons bacon drippings.
- Add onion to skillet and saute until softened. Add salt, water, vinegar, sugar, parsley and pepper.
- Bring to a boil. Pour over potatoes.
- Toss gently. Add bacon and toss again.
- Cover and chill overnight for best results.
- Reheat prior to serving.
