How to make it

  • In large skillet, fry bacon until crisp. Remove with slotted spoon and drain on paper toweling.
  • Drain skillet of all but 3 tablespoons bacon drippings.
  • Add onion to skillet and saute until softened. Add salt, water, vinegar, sugar, parsley and pepper.
  • Bring to a boil. Pour over potatoes.
  • Toss gently. Add bacon and toss again.
  • Cover and chill overnight for best results.
  • Reheat prior to serving.
