My Grandmothers German Potato Salad Recipe

Ingredients

8 slices bacon, diced

1 large sweet onion, diced

1 teaspoon salt

4 tablespoons water

1/2 cup cider vinegar

6 tablespoons granulated sugar

2 tablespoons fresh parsley, minced

1/4 teaspoon ground black pepper, or to taste

6 cups cooked potatoes, cooled, peeled and cubed

Directions

In large skillet, fry bacon until crisp. Remove with slotted spoon and drain on paper toweling.

Drain skillet of all but 3 tablespoons bacon drippings.

Add onion to skillet and saute until softened. Add salt, water, vinegar, sugar, parsley and pepper.

Bring to a boil. Pour over potatoes.

Toss gently. Add bacon and toss again.

Cover and chill overnight for best results.

Reheat prior to serving.
