Ingredients
  • 1 English long, seedless finely chopped
  • 1 pound mango, pitted, peeled and pureed
  • 2 teaspoons fresh grated or minced ginger
  • 1 1/2 teaspoons minced or pressed garlic
  • 3/4 teaspoon salt
  • 2 tablespoons rum
  • 2 teaspoons grated orange zest
  • 6 tablespoons fresh orange juice
  • 1/2 teaspoon dried red pepper flakes or 1/2 teaspoons minced fresh chile pepper
  • 2 teaspoons fresh thyme, minced or 1/2 teaspoon dried thyme
  • 1/4 cup vegetable oil

Directions
  1. In a medium bowl, whisk together the mango puree, ginger, garlic, salt, rum, orange zest orange juice, chile, thyme and vegetable oil; stir in the cucumber.
  2. Taste the vinaigrette for seasoning and chill until needed.
