Fried Mush or Polenta

- 1 cup plain yellow cornmeal (*not* cornmeal mix!) shopping list
- 3 cups water shopping list
- 1 teaspoon salt shopping list
- bacon grease for frying (or oil if you prefer---butter will burn) shopping list
How to make it
- Bring water and salt to a rolling boil in medium saucepan.
- Slowly add cornmeal to pan, stirring constantly.
- Drop heat to medium, continue stirring until thick and uniform.
- Pour into a greased, small loaf pan and let cool.
- Cover with plastic wrap and refrigerate for a few hours.
- Drain off any accumulated condensation.
- Heat bacon grease or oil in frying pan.
- Slice mush into 1/2 inch slices, you may wish to dredge in flour, maybe not---that's up to the cook!
- Fry on both sides until golden and crispy.
- Dinner? Salt & pepper well before serving
- Dessert/Breakfast? Shake powdered sugar over the mush slices, and serve with fruit, whipped cream, syrup or whatever makes your dress fly up!

My Mom was from Kansas and I guess she must have had this as a child because I remember having it for breakfast with butter and syrup!
