Ingredients

How to make it

  • Bring water and salt to a rolling boil in medium saucepan.
  • Slowly add cornmeal to pan, stirring constantly.
  • Drop heat to medium, continue stirring until thick and uniform.
  • Pour into a greased, small loaf pan and let cool.
  • Cover with plastic wrap and refrigerate for a few hours.
  • Drain off any accumulated condensation.
  • Heat bacon grease or oil in frying pan.
  • Slice mush into 1/2 inch slices, you may wish to dredge in flour, maybe not---that's up to the cook!
  • Fry on both sides until golden and crispy.
  • Dinner? Salt & pepper well before serving
  • Dessert/Breakfast? Shake powdered sugar over the mush slices, and serve with fruit, whipped cream, syrup or whatever makes your dress fly up!
  • Enjoy!

My Mom was from Kansas and I guess she must have had this as a child because I remember having it for breakfast with butter and syrup!
