Thai Cilantro Chicken Recipe

Ingredients
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup vegetable oil
  • 1/4 cup finely sliced green onions
  • 3 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 2 teaspoons minced garlic
  • 2 teaspoons minced ginger
  • 1 teaspoon hot bean paste
  • 1/2 teaspoon salt
  • 6 whole chicken legs (drumsticks with thigh attached)
  • Vegetable oil for brushing chicken

Directions
  1. Combine all marinade ingredients.
  2. Place chicken legs in a resealable plastic bag set in a shallow dish. Pour marinade mixture over chicken legs; close bag.
  3. Marinate in refrigerator 2 to 4 hours, turning occasionally to distribute marinade.
  4. Lightly brush chicken legs with oil.
  5. Place chicken in centre of cooking grate.
  6. Grill 30 minutes or until juices run clear, turning once halfway through grilling time.
