Fish Vera Cruz style

- 2 - 6 oz fish filets (I like skinless) snapper, cod, etc shopping list
- 12 medium shrimp, raw, peeled and deveined shopping list
- 1 clove garlic minced shopping list
- 1 med sweet onion diced shopping list
- 1 15oz can petite diced tomatoes shopping list
- 1 teas chipotle chile in adobo (canned) minced (more if you like it hot) shopping list
- 1/2 c sliced green olives and pimentos shopping list
- 1/2 c cilantro coarsely chopped shopping list
- 1 lime cut into wedges shopping list
- 1 teas oregano shopping list
- 1 T olive oil shopping list
- 1 1/2 c cooked rice shopping list
How to make it
- Add the oil to a 10" frying pan
- Add the onion and saute until translucent
- Add the garlic and saute from 30 seconds
- Add the tomatoes and oregano and low simmer for 10 minutes Add water if too thick
- Add the fish filets, being sure to nestle them down in the sauce
- Cover and simmer for 5 minuntes (depends on the fish, you want it about half done at this point)
- Add the shrimp and olives
- Cover and cook 3-4 minutes until the shrimp and fish are completely cooked
- Remove from heat add top with cilantro
- Serve with rice and lime wedges
- 1 serving = 1 filet, 6 shrimp, 3/4 c cooked rice and 1/2 sauce
