Ingredients

How to make it

  • Add the oil to a 10" frying pan
  • Add the onion and saute until translucent
  • Add the garlic and saute from 30 seconds
  • Add the tomatoes and oregano and low simmer for 10 minutes Add water if too thick
  • Add the fish filets, being sure to nestle them down in the sauce
  • Cover and simmer for 5 minuntes (depends on the fish, you want it about half done at this point)
  • Add the shrimp and olives
  • Cover and cook 3-4 minutes until the shrimp and fish are completely cooked
  • Remove from heat add top with cilantro
  • Serve with rice and lime wedges
  • 1 serving = 1 filet, 6 shrimp, 3/4 c cooked rice and 1/2 sauce

    Wow! thank you for a perfect recipe. Healthy, delicious and easy!! I have tilapia in freezer, waiting for a good recipe!! Manana in the cocina!!
