Southwest Quiche Recipe
SOUTHWEST QUICHE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Butler Estate in Irving, Texas in 1988.

Ingredients
  • 1/2 pound hot Italian sausages skin removed
  • 3 large eggs
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 4 ounce can chopped green chilies drained
  • 1-1/2 cups grated pepper jack cheese
  • 1 unbaked 9” pie shell
  • 1/2 cup grated sharp cheddar cheese

Directions
  1. Break up sausages then scramble fry in frying pan until no pink remains in meat and drain well.
  2. Beat eggs together in bowl then add milk, salt and pepper and stir well.
  3. Add green chilies, cheese and sausage meat then stir well and pour into pie shell.
  4. Sprinkle with cheese and bake on bottom rack in 350 oven for 40 minutes.

Sounds delish! My hubby might even like this one, I think he thinks Quiche is not one of your more Manly dishes. I love it myself.


Love the spicy cheese in this one - bet it would be so tasty topped with salsa and sour cream, too (can't miss any calories!)...thanks, chef.
