Ingredients
  • 1/4 lb liver
  • 1 lb steel-cut oats
  • Salt to taste
  • 1/2 tsp white pepper
  • 1/2 lb minced suet
  • 1 onion finely chopped

Directions
  1. Parboil liver until cooked through. Chill and mince
  2. Mix other ingredients, add water to make a stiff paste
  3. Tie ingredients into a pudding cloth or in a thoroughly cleaned sheep’s paunch 3/4 full.
  4. Put it in boiling water. Boil for 3 hours. Prick the paunch so often to release pressure so that it does not make a mess of your kitchen.
  5. Serve Hot
