How to make it

  • Parboil liver until cooked through. Chill and mince
  • Mix other ingredients, add water to make a stiff paste
  • Tie ingredients into a pudding cloth or in a thoroughly cleaned sheep’s paunch 3/4 full.
  • Put it in boiling water. Boil for 3 hours. Prick the paunch so often to release pressure so that it does not make a mess of your kitchen.
  • Serve Hot
