Ingredients
  • 1 tablespoon oil, your choice
  • 6 pork chops
  • 1 (10.75 ounce) can condensed cream of celery soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • 20 ounces package frozen hash brown potatoes, thawed
  • 1 cup shredded Cheddar cheese
  • 1 1/2 cups French-fried onions, divided

Directions
  1. Heat oil in large skillet over medium-high heat.
  2. Add pork chops and saute until browned.
  3. Remove from skillet and drain on paper towels.
  4. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  5. In medium bowl, stir together the soup, milk, sour cream and salt and pepper to taste.
  6. Stir in potatoes, 1/2 cup cheese and 1/2 cup onions.
  7. Mix together and spread mixture on bottom of 13x9" baking dish.
  8. Arrange chops on top of potato mixture.
  9. Cover baking dish.
  10. Bake for 40 minutes OR until chops reach 160 degrees F (70 degrees C).
  11. Remove cover, top with remaining cheese and onions.
  12. Bake, uncovered, 5 more minutes.

Hi Lorraine, made this yesterday. It was really yummy, just as I expected! I ended up cooking this a little longer, since the potatoes were not all the way cooked by the end, but that's just my oven. I also seasoned the pork chops with some salt and pepper before baking. All the rest I followed exactly. I served it with some asparagus. Potatoes came out nice and creamy, and the pork was tander and juicy. Thanks again for posting this! I added my pic under your main one, hope that's OK.
