How to make it

  • season the panko crumbs with the salt pepper,oreganoand paprika
  • heat oil and butter together till sizzling
  • dredge the fish in the crumbs and saute in oil,butter on medium till golden
  • heat oven to 400
  • place fish fillets in pyrex 9by 13 dish
  • pour tomatoes over the fish
  • add the olives and the feta
  • bake for 20 to 25 i minutes till fish is done and sauce is bubbly
  • add some more feta if you want to brfore serving
  • serve with couscous or basmati rice
