Sausage Noodle Skillet

- 1/2 lb. bulk pork sausage-mild (you can use spicier, but I like mild, and it works really well in this dish...it doesn't overpower the veggies shopping list
- 2 cups broccoli florettes shopping list
- 1 cup fresh baby carrots, cut in half shopping list
- 1 cup fresh, vine-ripe tomato, diced shopping list
- 1/2 lb. egg noodles shopping list
- 1 tsp. oregano-dried shopping list
- 2 cloves minced garlic shopping list
- 1 tbsp. butter (optional) shopping list
- 2 tbsp. olive oil (3 if you don't use any butter) shopping list
- 1 tsp. honey shopping list
- sea salt to taste shopping list
- a few grinds of black pepper to taste shopping list
How to make it
- *The prep time will be less if you don't have to cut up the veggies
- put 2-3 quarts of water in a pot and turn burner on high on to boil
- Cut veggies into bite-size pieces
- When water comes to a boil, add egg noodles and cook for about 5-7 minutes, or according to package--don't overcook, as they will cook a little when added to other ingredients
- In a large skillet, cook sausage and oregano on med-high until just brown--again, don't overcook because when you mix all the ingredients together they will need a few more minutes
- When sausage is done, remove to a bowl to rest a bit, and use the same skillet to cook veggies.
- Reserve a bit of the sausage rendering in the pan, add butter and olive oil, broccoli, carrots and garlic and saute until the veggies are tender-crisp.
- At the last minute, add the honey and cook about 1 minute
- add the sausage and a little of the juice that has accumulated in the bottom of the bowl (to taste...from jus a little to all of it depending on how fatty the sausage is)
- Mix the ingredients, heat for about 30 seconds
- Add diced tomatoes, stir to mix
- Add cooked noodles, stir to mix
- Cook all ingredients together on medium heat for about 1-2 minutes
- plate and serve with crusty bread and a nice dry red wine (or white, if you prefer)
- Enjoy!
- *note--the leftovers from this dish are even better!

I think the recipe may be better without the honey. Honey has a strong and lingering taste. If you feel you need some sweet try peaches or pears. Having said that this is a 5 for easy to do and a great taste.
