How to make it

  • In large, cast iron kettle, fry bacon strips. Remove, saving grease. Add meat, onion, and garlic and sauté in bacon grease until meat is gray.
  • Stir in tomatoes paste, then add spices and mix well through meat.
  • Pour in beer. Stir thoroughly and remove from heat.
  • Remove stems and seeds from dried chili pods. Boil in a covered saucepan with water for 15 minutes.
  • Put peppers and water into blender and blend into a thick sauce. Pour sauce into kettle with meat, stir and simmer for two hours.
  • Check after 1 ½ hours. If chili needs thickening, add Tablespoon of Masa Harina.
  • If Chili is too thick, add water sparingly. For hotter chili, add cayenne or Tabasco sauce - sparingly

    Perfect for a campout. Only two problems for me. No jalapeno's or serano's (chili staples here) but I'll add those. And I don't know how to add cayenne or tobasco "sparingly". I add it liberally and then throw in a few more dashes for good measure. LOL. But we're not normal. We really like the fire here.
