Frankieannes Fabulously Filling Fideo And Beans

- 2 Tbs. vegetable or canola oil shopping list
- 1 6 oz. package of fideo (found in the Mexican aisle) shopping list
- 1 cup chopped onion (about 1/2 of a medium) shopping list
- 1 8 oz. can tomato sauce shopping list
- 1-1/2 cups water shopping list
- 1 clove garlic, minced shopping list
- 1/2 tsp. ground cumin shopping list
- 1 Tbs. chili powder shopping list
- 1/4 tsp. salt shopping list
- 1 16 oz. can of pinto beans, rinsed and drained shopping list
How to make it
- Heat the oil in a large skillet over medium high heat. Break up and add the fideo and the onion and fry until fideo is browned, about 10 minutes. Pour in half the can of tomato sauce and 1 cup of water. Add the garlic, cumin, chili powder and salt and stir to blend. (I found this works best using two spoons and a salad toss kind of mixing.) Bring to a boil and cook until the liquid is almost evaporated.
- Stir in the remaining tomato sauce, water (rinse the tomato sauce can with the water!) and the beans. Reduce heat to medium, cover and cook for about 10 minutes until sauce is thick and fideo is tender. Stir a couple of times to prevent sticking.
