Banana Yogurt Bread With Flax Recipe
Moist and flavorful banana bread. My husband's favorite, despite the fact that it has whole wheat flour, flax and yogurt in it!

Ingredients
  • 1/2 cup butter, softened
  • 3/4 cup light brown sugar, packed
  • 1 egg (or 1/4 cup egg substitute)
  • 3/4 cup whole wheat flour
  • 3/4 cup all purpose flour
  • 1 tsp. baking soda
  • 3 tbsp. ground flax
  • 1/2 tsp. salt
  • 1 1/2 cups mashed bananas (about 3 small)
  • 1/4 cup plain nonfat yogurt
  • 1 tsp. vanilla extract
  • 3/4 cup chopped walnuts

Directions
  1. Preheat oven to 350*
  2. In a large bowl, cream together butter and sugar until fluffy; beat in the egg.
  3. In a separate bowl, sift or whisk together the flours, flax, baking soda and salt.
  4. In another small bowl, combine bananas, yogurt and vanilla.
  5. Add dry ingredients alternately with banana mixture to the creamed mixture, each time mixing until just blended.
  6. Stir in walnuts.
  7. Bake for about 50 minutes or until toothpick inserted in center comes out clean.
  8. Cool in pan for five minutes, then remove and cool completely on a wire rack.
  9. Pour into greased loaf pan. If desired, sprinkle a few extra walnuts on top.
