Banana Yogurt Bread with Flax

- 1/2 cup butter, softened shopping list
- 3/4 cup light brown sugar, packed shopping list
- 1 egg (or 1/4 cup egg substitute) shopping list
- 3/4 cup whole wheat flour shopping list
- 3/4 cup all purpose flour shopping list
- 1 tsp. baking soda shopping list
- 3 tbsp. ground flax shopping list
- 1/2 tsp. salt shopping list
- 1 1/2 cups mashed bananas (about 3 small) shopping list
- 1/4 cup plain nonfat yogurt shopping list
- 1 tsp. vanilla extract shopping list
- 3/4 cup chopped walnuts shopping list
How to make it
- Preheat oven to 350*
- In a large bowl, cream together butter and sugar until fluffy; beat in the egg.
- In a separate bowl, sift or whisk together the flours, flax, baking soda and salt.
- In another small bowl, combine bananas, yogurt and vanilla.
- Add dry ingredients alternately with banana mixture to the creamed mixture, each time mixing until just blended.
- Stir in walnuts.
- Bake for about 50 minutes or until toothpick inserted in center comes out clean.
- Cool in pan for five minutes, then remove and cool completely on a wire rack.
- Pour into greased loaf pan. If desired, sprinkle a few extra walnuts on top.

I made this today. Great tasting banana bread. Very moist. I used almonds instead of walnuts and instead of using the butter I doubled the yogurt. I ate almost half of it already. I posted a pic. Thanks for the great recipe
