How to make it

  • Preheat oven to 350*
  • In a large bowl, cream together butter and sugar until fluffy; beat in the egg.
  • In a separate bowl, sift or whisk together the flours, flax, baking soda and salt.
  • In another small bowl, combine bananas, yogurt and vanilla.
  • Add dry ingredients alternately with banana mixture to the creamed mixture, each time mixing until just blended.
  • Stir in walnuts.
  • Bake for about 50 minutes or until toothpick inserted in center comes out clean.
  • Cool in pan for five minutes, then remove and cool completely on a wire rack.
  • Pour into greased loaf pan. If desired, sprinkle a few extra walnuts on top.

    I made this today. Great tasting banana bread. Very moist. I used almonds instead of walnuts and instead of using the butter I doubled the yogurt. I ate almost half of it already. I posted a pic. Thanks for the great recipe
