Mint Brownie Pie Recipe

Ingredients

1 1/4 cups flour

1/2 tsp baking soda

1/4 tsp salt

3/4 granulated sugar

1/2 cup (1stick) butter or marg

2 Tbsp water

1 1/2 cups (10oz.pkg) Mint flavored chocolate morsels(divided

2 eggs

1 tsp vanilla

Vanilla or Mint Choco Chip Ice cream

Note: Plain chocolate morsels are just as good but the mint gives it a little kick.

Directions

Combine flour, baking soda and salt in a small bowl.

Combine sugar, butter and water in medium saucepan.

Bring to a boil over medium heat.

Remove from heat and stir in 1 cup of morsels until smooth.

Add eggs, one at a time, stirring well after each egg.

Stir in vanilla.

Add dry ingredients and stir until smooth.

Stir in remaining 1/2 cup of morsels.

Spread mixture into a greased 9 inch pie plate.

Bake @ preheated 325º oven for 30-40 minutes or until toothpick inserted in center comes out slightly moist.

Cool completely in pie plate before serving.

Pie can be topped with ice cream and other toppings.

I made this for the weekend using regular chocolate chips and in a graham pie crust. I was a little surprised to find that it was basically a brownie baked in a pie pan so I cut it in half and put whip cream and strawberries in the middle and then covered the top with whip cream. It was great. Thanks for the recipe!
