My first WonTon Basket filling. This one with a Mexican flair. The corn adds great color and its super easy.

Ingredients
  • Yields 2 cups or 32 tbsp

  • 1 can Red Beans, canned
  • 1 can Red Beans, canned
  • 3/4 cup corn, frozen and thawed
  • 1/4 cup onion, finely diced
  • -------
  • 6 tbsp Salsa
  • 1/8 cup Jalapenos, pickled chopped
  • 6 oz Monterey Jack Cheese, with jalapeno pepper
  • 32 WonTon Baskets

Directions
  1. You will be using canned beans for this so you will have 1 cup of beans left over.
  2. Refer to the WonTon Basket recipe. These baskets can be made up ahead of time just waiting for your filling.

  5. Dump both cans of beans in a colander and rinse them well and mix together.
  6. Measure out 1 cup of the mixed beans, put them in a bowl with 2 tbsp of the salsa and mash them up good.
  7. Add the corn to the mashed beans with another 2 tbsp of salsa and mix together well.
  8. Take another cup of the mixed beans from the collander and chop them up. This will give good color and texture to the mix.
  9. Chop up the jalapenos and add them and the onions to the chopped beans along with another 2 tbsps of salsa and mix well.
  10. Put the chopped bean mixture and mash bean mixture to gether and mix well.
  11. Heat the mixture in the microwave for 7 minutes on meduim high.

  13. Slice the block of Monterey Jack into 32 evenly sized cubes.
  14. Put 1 tbsp of mixture in each WonTon Basket
  15. Top the WonTon Basket with a cube of cheese
  16. Microwave on high 1 minute

Sorry, I'm a little confused: are there two different kinds of beans?
If not, then why use 2 cups if there will be 1 cup left over?
Please straighten out my thinking.


Yes there are both red and black beans all tossed together during the rinsing in the collander. I fish out one cup of the combined beans and mash them into a paste with the salsa. To keep texture and color I take a second cup of the beans and chop them to reduce the size for the filling but still shows them off.

When you combine the cans its just too many beans so there will be one cup remaining in the collander you can throw in some soup or salad or.. or...


This looks so elegant and sounds delicious! I have to give you a beauty flag, too! I think what Lovebreezy was saying, is your ingredients state 2 cups of red beans. Got me a little confused too, until I just read your comments.
