No Fat No Sugar No Flour Muffins Recipe

These little muffins are moist and tastey. It's hard to believe they contain no extra fat or sugar. Too good to be true! I eat them for breakfast. They freeze well so make a couple of batches!

Ingredients
  • 3 medium bananas
  • 1 tin (454g) sliced peaches or apricots, drained and finely chopped.
  • 75g (1.5cups) ground oatmeal
  • 75g (1.5cups) unprocessed natural bran
  • 1 egg
  • 60g raisins
  • 2 tsp cinammon
  • 2 tbsps choc drops or chopped nuts (optional) FOR SPRINKLING
  • VARIATIONS: use grated carrot , tinned pineapple instead of apricots/peaches. Ground ginger instead of cinammon etc. Sprinkle with seeds or coconut shreds instead of choc chips.

Directions
  1. Preheat oven to 180 degrees.
  2. In a large bowl mash 3 bananas.
  3. On a chopping board finely chop tinned fruit. Add to banana
  4. Add all other ingredients and stir together.
  5. Spoon into silicon cup-cake , or paper cases.
  6. Sprinkle with a few choc drops/nuts.
  7. Bake for 20 mins.
  8. Leave to cool before turning out of silicon cases.
