Warm Dates Stuffed With Blue Cheese And Almonds Recipe

Ingredients
  • 12 medium medjool dates (available in most supermarkets)
  • 4 ounces blue cheese -- such as Maytag Blue, at room temperature
  • 2 tablespoons sliced almonds -- toasted and coarsely chopped

Directions
  1. Arrange a rack at center position and preheat oven to 400 degrees.
  2. Have ready amedium-size baking pan or dish.
  3. Slice the dates lengthwise, cutting (not all theway through) just enough to remove the pits.
  4. Fill the cavities of the dates with about 1/2 teaspoon blue cheese.
  5. Save extra cheese for another use.
  6. Sprinkle dates with chopped almonds, and arrange in the baking pan.
  7. (Dates can be prepared 3 hoursahead; cover with plastic wrap and refrigerate.
  8. Bring to room temperature 30minutes before baking.)
  9. Bake dates until warm and cheese has melted, about 8
  10. minutes.
  11. Remove and arrange on a small serving plate or place them in a long, narrowolive tray.
  12. Serve warm.
