Ingredients
  • Dressing:
  • ¼ cup white sugar
  • ¼ cup (6 packets) Splenda sugar substitute
  • ½ cup fresh squeezed lemon juice
  • 1 tablespoon diced sweet onion
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ⅔ cup olive oil
  • 1 tablespoon poppy seeds
  • Salad:
  • 3 cups fresh spinach leaves
  • 1 head romaine lettuce, torn into bite-size pieces
  • 4 ounces bleu cheese, crumbled
  • 1 cup walnuts or pecans, toasted in a skillet until lightly browned
  • ¼ cup dried cranberries
  • ¼ cup dried blueberries
  • 1 apple, peeled, cored and finely diced
  • 1 pear, peeled, cored and finely diced

Directions
  1. For the dressing, combine sugars, lemon juice, onion, Dijon and salt in food processor or blender; process until ingredients are mixed together well.
  2. Leave blender or processor on, and add the oil in a steady stream until mixture is smooth and emulsified.
  3. Add poppy seeds; pulse for a few seconds to mix them into the dressing completely.
  4. Store the dressing in refrigerator until it is needed. Dressing can be kept in refrigerator for 3 to 4 weeks.
  5. Dice the apples and pears, and add the dried cranberries and dried blueberries.
  6. Add just enough dressing to coat the fruits thoroughly (the lemon juice in the dressing will keep the fresh fruits from turning brown after dicing). This can be done several hours before serving.
  7. When ready to serve, place spinach and romaine in a large bowl.
  8. Top with bleu cheese, walnuts and fruit mixture.
  9. Stir salad to blend ingredients together.
  10. Serve the salad with the remaining dressing on the side for anyone who would like additional dressing.

So I've never joined this site - despite the weekly gentle nudging of my dear mama:) But when I saw you were stealing my recipes, I decided I had to set the record straight!!!!

I didn't know I would be famous on here:) I guess it can't be called stealing when you clearly give me credit!! This was a great salad. Doesn't have to be made with splenda, but it didn't make a difference! Love you mama
