Corn Chili

- 2 tablespoons vegetable oil shopping list
- 1 medium onion, diced shopping list
- 1 teaspoon cayenne pepper shopping list
- 2 teaspoons dried oregano shopping list
- 1 pound frozen corn kernels shopping list
- 29 ounces Mexican stewed tomatoes shopping list
- 15 ounce can pinto beans, drained shopping list
- 15 ounce can kidney beans, drained shopping list
- 2 teaspoons chicken bouillon granules shopping list
- 1 cup water shopping list
- 1/2 teaspoons salt (OR not) shopping list
- 1/4 teaspoons ground black pepper shopping list
- 1 1/2 cups tomato sauce shopping list
- 2 tablespoons tomato paste shopping list
How to make it
- In large pot, cook onion in oil over medium heat for 1 minute.
- Stir in cayenne and oregano and cook 1 minute more.
- Stir in corn, tomatoes, beans, bouillon granules, water, tomato sauce, tomato paste, salt and pepper.
- Cook, uncovered, until heated through and slightly thickened, 10 to 15 minutes.

This was a very quick and easy recipe. The cayenne pepper amount is way too much! No amount of cheese or sour cream toned it down, it was very overpowering! I would start with 1/4 teaspoon and increase in small increments after tasting. I didn't have...more
