Mixed Cherry Tomatoes With Tamarind Dressing

- 1/2 teaspoon cumin seeds shopping list
- 1/2 teaspoon fennel seeds shopping list
- 2 teaspoons tamarind concentrate shopping list
- 2 tablespoons hot water shopping list
- 2 teaspoons mild honey shopping list
- 1 tablespoon extra virgin olive oil shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon black pepper shopping list
- 3 cups mixed cherry tomatoes halved shopping list
How to make it
- Toast cumin and fennel seeds then coarsely crush using a mortar and pestle or spice grinder.
- Whisk tamarind concentrate into hot water until dissolved.
- Whisk in honey, oil, salt and pepper until blended.
- Add tomatoes and spices then toss to coat.
- Let stand at room temperature 1 hour then season with salt.
