How to make it

  • Put cubed potatoes in a medium sized pot and pour chicken stock over potatoes to cover and boil until tender
  • In the meantime, melt butter in slightly larger pot, add onions and garlic and cook over low- medium heat until tender.
  • Mix blour with the onions, pour chicken stock from potatoes into the onion pot.
  • Stir half&half, pepper, and salt into the chicken stock.
  • Add potatoes into the chicken stock pot.
  • Stir in 1/2 cup bacon and 1 cup cheddar cheese.
  • Stir over low-medium heat until cheese melts and soup begins to thicken.
  • Use remaining cheese and bacon to sprinkle over soup when serving.
