Ingredients
  • 4 pounds mussels
  • 5 garlic cloves minced
  • 1 large red bell pepper cut into julienne strips
  • 1 large green bell pepper cut into julienne strips
  • 1 large white onion sliced thin
  • 3 ounces pepperoni cut into thin strips
  • 2 cups dry white wine
  • 3 dashes Tabasco pepper sauce
  • 2 bay leaves
  • 6 black peppercorns crushed
  • 1 teaspoon coarse salt

Directions
  1. Scrub mussels well in several changes of water then scrape off the beards and rinse well.
  2. In a large kettle combine the garlic, bell peppers, onion and pepperoni.
  3. Cook mixture over low heat stirring constantly until vegetables are softened.
  4. Add wine, mussels, Tabasco, bay leaves, peppercorns and salt.
  5. Steam mussels covered over heat shaking kettle occasionally for 6 minutes.
  6. Discard bay leaves and any unopened mussels.
