Rhubarb Cheesecake

- 3/4 cup granulated sugar shopping list
- 7 tablespoons granulated sugar shopping list
- 3 tablespoons cornstarch shopping list
- 4 cups rhubarb cut in 1" pieces shopping list
- 1 large graham cracker crust shopping list
- 6 ounces cream cheese softened shopping list
- 2 large eggs shopping list
- 1/2 teaspoon vanilla shopping list
- 1 cup sour cream shopping list
How to make it
- In large pan mix 3/4 cup sugar and cornstarch then add rhubarb and 1 tablespoon water.
- Stir often over medium heat then heat until mixture comes to a full boil.
- Pour rhubarb mixture into crust.
- Blend cream cheese, eggs, vanilla and 6 tablespoons sugar and pour over rhubarb.
- Bake at 350 for 20 minutes.
- Mix sour cream with remaining 1 tablespoon sugar and spread evenly over filling.
- Bake until topping is set when gently shaken about 5 minutes.
- Allow to cool then cover and chill at least 2 hours or until next day.
