Pink Lemon Angel Cake Recipe

Ingredients
  • 1 cup cake flour
  • 3/4 cup sugar
  • 12 egg whites, room temperature
  • 1 1/2 tsp cream of tarter
  • 1/4 tsp salt
  • 1 1/4 tsp lemon extract
  • 3/4 cup more sugar
  • 4 to 6 drops of red food color ( to make pale pink )

Directions
  1. Sift flour and sugar well.
  2. Combine whites with cream of tarter, salt and lemon extract.
  3. Beat until foamy.
  4. Beat in food color.
  5. Gradually add sugar, 2 Tbs at a time beating until stiff but not dry peaks.
  6. Fold in sugar and flour mixture carefully.
  7. Pour into an ungreased 10 inch tube pan.
  8. Bake in a 325F oven 35 to 45 minutes or until done.
  9. Invert to cool completely before removing.
  10. Serve with whipped cream and berries if desired.
