Ingredients

3 tablespoons butter, softened

1 tablespoon fresh garlic, minced

4 1/2 to 3/4" slices Italian OR Vienna bread

10 ounces package romaine greens

2 cups small broccoli florets

1 1/2 cups cherry tomatoes, halved

4 ounces Mozzarella cheese, 1/2" cube

1/4 cup pitted ripe olives

2/3 cup Italian salad dressing

Directions

Heat broiler.

Combine butter and garlic in small bowl.

Spread butter over both sides of bread slices.

Place onto UNgreased baking sheet.

Broil 4 to 6" away from the heat, turning once, until lightly toasted (4 to 5 minutes).

Cut bread slices into 1" pieces.

Place all remaining ingredients EXCEPT salad dressing in a salad bowl.

Toss lightly.

Add dressing and toss until well coated.

Add bread cubes.

Toss lightly.

**Can be made up to 2 hours ahead.

OH... I am SOOO glad you posted this! One of the realtors that we work with at the office provided lunch one day, and she brought a salad like this. It was fabulous. And I asked for the recipe, but, she never brought it. Thanks so much!
