Panzanella

- 3 tablespoons butter, softened shopping list
- 1 tablespoon fresh garlic, minced shopping list
- 4 1/2 to 3/4" slices Italian OR Vienna bread shopping list
- 10 ounces package romaine greens shopping list
- 2 cups small broccoli florets shopping list
- 1 1/2 cups cherry tomatoes, halved shopping list
- 4 ounces mozzarella cheese, 1/2" cube shopping list
- 1/4 cup pitted ripe olives shopping list
- 2/3 cup Italian salad dressing shopping list
How to make it
- Heat broiler.
- Combine butter and garlic in small bowl.
- Spread butter over both sides of bread slices.
- Place onto UNgreased baking sheet.
- Broil 4 to 6" away from the heat, turning once, until lightly toasted (4 to 5 minutes).
- Cut bread slices into 1" pieces.
- Place all remaining ingredients EXCEPT salad dressing in a salad bowl.
- Toss lightly.
- Add dressing and toss until well coated.
- Add bread cubes.
- Toss lightly.
- **Can be made up to 2 hours ahead.

OH... I am SOOO glad you posted this! One of the realtors that we work with at the office provided lunch one day, and she brought a salad like this. It was fabulous. And I asked for the recipe, but, she never brought it. Thanks so much!
